CURRENT RESEARCH ACTIVITIES

 

Study of the properties of enzyme modified rice starch and its functional properties as fat replacer – Co-Researcher

Rice starch is debranched using pullulanase enzyme at various time intervals. The properties of these enzyme modified rice starch is studied for their swelling, solubility, viscosity, lubricating properties and morphological properties. Their functional properties are being exploited through the application in a food model system.
